Lavender Blueberry Compote

Ingredients 

  • 5 cups blueberries, rinse to clean  
  • ½ c sugar 
  • ⅓ cup fresh lemon juice 
  • 2-3 Tbs cornstarch 
  • 1-2 Tbs ground Blue Canyon Farm Culinary Lavender 
  • ½ ground cardamom 
  • zest of 1 lemon 


In a large saucepan, combine 3 cups of the blueberries, ground lavender, fresh lemon juice, sugar, and 1 Tbs cornstarch. Bring to a boil on a medium heat, stirring constantly. Reduce heat and simmer for 10-12 minutes until the blueberries are thickened and jam-like, stirring occasionally. Add the remaining 2 cups of blueberries and cook for another 8  minutes. Remove from heat and allow to cool completely.

Serve on your favorite waffles, pancakes, blintzes, or ice cream!
